Flamingo Brunch House sets a new pace, thanks to an old owner

Nestled on Ecorse Road, Flamingo Brunch House isn’t just a breakfast spot—it’s a Taylor institution built on decades of community, resilience, and a love for great food.

With its mix of classic favorites and modern touches, the Flamingo continues to welcome long-term patrons and new visitors alike.

The story of the Flamingo is closely tied to its owner, Phil Mina. He first took over the restaurant in July 2004, running it as a full-service family eatery for 15 years before selling it in March 2019. When the new owners defaulted on their land contract, Mina saw a chance to reclaim the business and reimagine it.

In September 2025, he reopened the Flamingo as a single-shift brunch spot, keeping some original touches while introducing a fresh, modern concept.

“Being a small business owner means everything to me,” Mina said. “I work from my heart, with heavy responsibility. I love my customers, and cooking is all I know. My father, being a chef, taught me everything about the business.”

A Taylor native, Mina was born and raised in the city, graduated from Taylor Center High School in 1986, and still lives on the same street he grew up on.

Over the years, he has partnered with local organizations like the Taylor Police Department and Little League, reinforcing the restaurant’s role as a community hub. That sense of family extends to his staff, too—several servers have been with the Flamingo for many years, showing a loyalty that contributes to the warm, consistent dining experience.

The Flamingo name is a nod to the original owners’ love of Florida; a piece of history Mina has preserved.

Today, the menu reflects both tradition and innovation. Guests flock for stuffed French toast, Biscoff pancakes, shrimp and grits, the Flamingo skillet, and Phil’s turkey club—but an underrated favorite is the chorizo and eggs. Diners enjoy high-quality dishes at reasonable prices, paired with friendly, efficient service in a down-to-earth, welcoming atmosphere.

Like any small business, Mina faces challenges, including rising costs and finding reliable staff. Yet his passion never wavers. For him, the Flamingo is more than a restaurant —it’s a lifelong calling, rooted in family, community, and a love of cooking.
